Tuscany Pasta

Throughout the year we depend upon sun-dried tomatoes to transport us to tomato season and the dog days of summer. It might be just a bowl of pasta or it might be our winter sanity. Either way we’re stock piling different “pastas”— whole wheat, zucchini noodles, gluten free, stuffed raviolis and more so we never miss out on a weeknight bowl of goodness.

INSTRUCTIONS
SERVES 2-4
  1. Cook 8 oz of dry pasta to al dente. While still hot, toss with 6 to 8 discs of Vegan Blend and enjoy!
  2. Garnish with roasted cherry tomatoes and fresh basil leaves, if desired.
OTHER RECIPE IDEAS
  • Perfect as a pizza sauce or simply slathered on the crusts ??? flour-based, cauliflower or gluten-free varieties.
  • Lightly fry smashed, cooked chickpeas in melted Sun-Dried Tomato Blend for a crunchy, hearty side or salad topping.
  • Stir in to hot grain or riced veggie bowls.
