A quick sauté of greens gets even quicker without having to prep onion, garlic, herbs or lemon juice. Fewer herbs in the fridge makes for more room for all that spinach, kale, Swiss chard and broccolini!
Melt 2 discs of Vegan Blend in large skillet over medium heat.
Add 4 heaping cups of chopped spinach, kale or other greens to skillet and stir. Cook, uncovered, until spinach barely wilts, 1-2 min. If using kale or heartier greens, cook until greens are bright green and tender, about 5-6 min.
Remove from heat, stir in 2 or more Vegan Blend discs. Salt to taste.
Garnish with pomegranate seeds and toasted pine nuts.
