Basil Grilled Cheese Sammie

We love a grilled cheese sammie as much as any red-blooded ‘merican, but had no idea how much better it could be with Medlee Basil Pesto Butter! We’ve tried a mozzarella and sharp cheddar blend, but also love a touch of gouda. If you’re as butter obsessed as we are, you can get two sammies out of one packet of Medlee Basil Pesto Butter. If you want to hold back on the butter (not something we could ever do!), just butter the outside of the sandwich.

INSTRUCTIONS
SERVES 1
  1. To make Medlee Basil Pesto Butter more spreadable, leave it on the counter for a few minutes. Then spread both sides of two slices of thick, slightly stale bread with one medallion each (four medallions of butter total on two slices of bread).
  2. Heat a nonstick skillet over medium heat. Sandwich as much freshly shredded cheese (mozzarella, sharp cheddar, gouda, American, whatever combo sounds good!) as you can handle between the two slices of bread. Gently place a buttered side of the sandwich on the hot skillet.
  3. Allow the sandwich to brown and the cheese start to melt, about 5 minutes. Flip carefully and watch for any burning. Peek in between the bread to make sure the cheese is melting. Reduce the heat if the bread is getting dark without melting the cheese.
  4. Remove from heat, slice into triangles and enjoy immediately!
